Procrastination Muffins


Hi! Remember me? Probably not.

Here's the upshot of the past 9 months:

Nathan is going to preschool full time! Like, 5 days a week! ALL DAY!
I am going to grad school! Full time! Because I like to do things the hard way!

Right now I'm supposed to be studying for a math test, but instead I'm blogging. Because what better time to resume my fledging blogging career than 16 hours before my first math test of the semester? Before I decided to write, I made muffins from a recipe I invented (mostly). Because invented muffins made from scratch are way more important than math. RIGHT?

Here's the recipe. Go to town.

Procrastination Muffins
(recipe by me)

6 tablespoons butter, melted
1 cup whole wheat flour
1/2 cup ground flaxseed
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 eggs
2/3 cup packed brown sugar
1 cup applesauce
2 medium carrots, shredded
1 cup old fashioned rolled oats
2 handfuls shredded coconut
  • Preheat oven to 375.
  • Mixed together the flour, ground flaxseed, baking powder, baking soda, cinnamon, and salt in a large bowl.
  • In another bowl, beat the eggs, then whisk in the brown sugar. Stir in the melted butter and the applesauce and mix until smooth.
  • Combine the wet and dry ingredients, and then incorporate the carrots, oats and coconut.
  • Line a 12 cup muffin tin and divide batter evenly amongst cups.
  • Bake for 20-22 minutes.
  • Enjoy while studying for math test or blogging.
